Some friends were talking about this savory dish a couple days ago. I googled a recipe, found a weird one, and adjusted it a bit. Here’s my best guess at what went down in our kitchen. You can’t exactly screw this one up unless you overcook it. I promise, this one is more delicious than it looks, as long as you're a blue cheese fan!
INGREDIENTS:
1 pound wild Alaska halibut
1/4 cup blue cheese (the real stuff, not the dressing)
2 tbsp butter
1/4 cup Mayo
1 tsp lemon juice
1 garlic clove, minced
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp black pepper
5 or so leaves of fresh basil, chopped
A dash of salt
Chives to sprinkle on top
PREPARATION: Set oven to 450
In a small bowl mix together cheese, butter, mayo, lemon juice and garlic.
Add in all the remaining seasonings and basil; mix well and set aside.
Arrange the fillets in a single layer on the prepared pan, sprinkle with salt.
Bake for 12 minutes. It may need more time if your fish is thick. Your fish should be almost finished before the next step.
Broil for 2 minutes, until the top is browned and the sides bubbly. It should flake easily with a fork.
Sprinkle chopped chives on top
Enjoy with some fresh bread and dip it into the extra butter/blue cheese.
