Cod topped with savory roasted veggies

I visited our cod fisherman recently and he (of course) sent me home with fresh cod for dinner. But the real treat? One of his super simple, go-to recipes. I didn't measure out ingredients, but the recipe is simple enough that I think you can figure it out :) 

INGREDIENTS

  • Wild cod fillets 
  • Cherry tomatoes 
  • Purple onions
  • Cilantro 
  • Salt and pepper to season
  • Lemon slice
  • Capers (optional) 

PREPARTION

  1. Preheat oven to 400
  2. Quarter cherry tomatoes, diced purple onion, and chop cilantro. Add to small bowl and toss in olive oil. Season with salt and pepper and roast for 8 minutes or so. 
  3. Add cod on top of the roasted veggies and season with salt and pepper. Cook additional 10 minutes until cod flakes easily. 
  4. I put our cod over quinoa and spooned the roasted veggies on top. Add a few capers if desired and a squeeze of fresh lemon.
