One Pot Wonder Salmon Coconut Curry Pasta

Our friend, Kathy, owner of Free Spirit Wear, gave us this recipe and it's now one of our new favorites. Try it with red curry, green curry, rice noodles, linguine, and potatoes- it's all good! Kathy says, 
"I couldn't believe that I could just put it all in one pot and boil it and it would end up tasting so good!" 
INGREDIENTS 
  • 12 ounces linguine or rice noodles or potatoes 
  • 3 cups water 
  • 1 can coconut milk
  • 2 vegetable stock cubes (or miso paste) 
  • 2 cloves garlic, thinly sliced 
  • 1 onion, sliced 
  • 8 mini orange and red peppers, sliced 
  • 15 grape tomatoes cut in half 
  • 1 lb. wild Alaska seafood (salmon, halibut or cod) She adds more sometimes and does a combo of fish 
  • 2-3 tbsp. Indian curry paste 
  • 1 tbsp. canola oil 
  • 1 bay leaf 
  • a bunch of parsley 
  • a bunch of cilantro or basil 
  • 1 tbsp. honey 
  • salt
  • pepper 

PREPARATION

  1. Place all ingredients in a pot. Cover pot and bring to boil. 
  2. Reduce to a low simmer and keep covered and cook for 17 minutes, stirring a few times
  3. Cook until pasta is al dente, or potatoes are done
  4. Season with salt and pepper
