Creamy  Pesto Parmesan Baked Halibut with Spinach

Comfort food, Alaska style. This creamy halibut dish is delicious when served with some crusty bread. Top some toast with the creamy spinach and halibut for a such a satisfying lunch or dinner. 

INGREDIENTS: 

  • Two 6 oz. halibut portions, skin removed 
  • 1/4 cup good pesto 
  • 3 cups packed spinach 
  • 1 c grated parmesan cheese 
  • 1/2 c plain full fat yogurt or sour cream 
  • lemon slices 
  • 1/4 c chopped parsley 
  • salt and pepper to season 

PREPARATION 

  • Preheat oven to 375°F
  • Bring a pot of water to boil. Submerge spinach for 30 seconds. Drain and run cool water over the spinach to stop it from cooking
  • Mix spinach, yogurt, and 3/4 c parmesan in a small bowl. Once mixed, cover the bottom of your baking dish with the creamy mix. 
  • Add halibut on top of the creamy mix. Spread pesto evenly over entire fillet and season with salt and pepper. Top with remaining parmesan cheese. 
  • Baked at 375°F for 12 minutes, until halibut flakes with a fork. Timing may be more or less depending on the thickness of the fillet. You can start checking at 10 minutes. Try not to overcook it! Halibut is very dry when overcooked. 
  • Remove halibut from baking dish, top with the creamy spinach mixture. Add chopped parsley on top and a squeeze of fresh lemon.
