We know. Leftover salmon is kind of an oxymoron, but every now and then, you cook a full salmon fillet and have enough for more meals. Here are our go-to ways to enjoy your leftover salmon.
1. On a Salad

Salmon and a healthy dose of greens, plus an avocado gives you the perfect mid-day pick me up. Packed with Omega 3s, this meal is delish! Try adding squash as a starch and top it with Annie's Goddess Dressing. Photo by @the_bananadiaries
2. Salmon Salad Sandwich
A major step up from a tuna salad sandwich, salmon replaces tuna in this O'Laire Family favorite. We like to add celery, capers, and hot sauce to our signature sandwich. We literally eat this sando 2-3 times a week.
3. Tacos

Taco Tuesdays are a thing and we're real serious about our sockeye salmon tacos. You can make them simple with a little coleslaw and a mayo/yogurt sauce with lime or you can get fancy and try a unique recipe like this one for Philly Roll Tacos with Wasabi Cream. 4. Lettuce Wraps

Okay, lettuce wraps might sound boring, but how about Honey Sriracha Salmon Lettuce Wraps? This recipe is by Alaska seafood rock star, Maya Wilson of Alaska From Scratch. We have yet to try a recipe from her blog that we don't love.
5. Soup or Chowder
During the long Alaska winter, we eat A LOT of soup and chowder. This recipe for Red Curry Salmon Chowder is our favorite. It's spicy, so if you're looking for something that will satisfy the whole family, try this Sockeye Salmon Tortilla Soup. Simply sub your leftover salmon for the canned or pouched salmon the recipe calls for.
